Moonlight Catering is pleased to be going into our 15th year in business as of May 2015. Chef John has 40 years experience in restaurants, pubs & catering in the Greater Victoria area. Using fresh local Vancouver Island products when ever possible.

BBQ'd or Baked Whole Salmon 5-7 lb.
Fresh Butter.
2-3 lemons.

Fresh dill weed
[dry if fresh not available].

Fresh ground salt.
Fresh ground pepper.

Whole Salmon h
ead off [wild salmon].
Appetizers
Method:
1. Wash salmon thouroughly & pat dry with paper towel.
2. Place salmon on large sheet of tin foil [big enough to cover salmon]
3. Melt 1/2 cup butter in small sauce pan on low heat. Season the salmon inside & out with fresh squeezed lemon, dill, salt & pepper.
4. Place serveral slices of lemon inside the salmon & drizzle melted butter inside & out of salmon.
5. Wrap tightly in tin foil & repeat with a second sheet of tin foil. [place on baking sheet if using oven].
6. Bake in 400 * F oven [approx. 1 1/2 hours] or cook on BBQ medium high heat [turn salmon at least four time on BBQ for even cooking]
7. When completely cooked the bones of the salmon should be able to be pulled out in one piece
