Asparagus & Wild Rice Soup.

1 tblsp vegetable oil.
1 large onion chopped.

2 cloves fresh garlic
1 lb. Fresh Asparagus cut into 1/2" slices.

3 3/4 cups chicken or vegetable broth.
1 cup cooked long-grain wild rice mix.

1/2 tsp. salt. pepper to taste. 1 can [385ml] Carnation Skim Evaporated Milk.

2 tb sp. cornstarch. 2 tb sp
dry white wine [optional].
1/3 cup fresh chopped parsley.
Appetizers
Method:
1. Heat oil in large saucepan over medium high heat. Add onions, garlic and asparagus; cook stirring occasionally for 5 minutes or until vegetables are tender.
2. Add broth, rice, salt & pepper; bring to a boil over medium high heat. Stir in small amount of evaporated milk & cornstarch in a small bowl until smooth. Add to saucepan along with the remaining milk & white wine [if using].
3. Cook stirring occasionally for 3 to 5 minutes or until soup thickens.
4. Stir in fresh chopped parsley & serve.
